SHAUNA'S INTERNATIONAL CHITLIN STUFFING

Prepare large boxed cornbread mix and bake according to directions on box.
Cover with paper towel let sit out overnight.
Melt 2 tablespoons butter in fry pan.
Add one medium (chopped) onion and one stalk celery (chopped) together in a fry pan.
Cook until translucent and remove from heat.
Crumble cold cornbread, 2 lbs chopped chitlin sausage (see below), and sauteed onions and celery into bowl.
Add one tablespoon ground sage, one 10 ounce can condensed cream of chicken soup and 5 ounces water.
Mix all ingredients together well.
Add Salt and Pepper to taste.

**You may bake in a casserole or stuff in a bird


Shauna’s Chitlins

SHAUNA'S INTERNATIONAL CHITLIN SAUSAGE
Yield: 4 lbs
3 lb Fresh Pork
1 lb Shauna's Fully Cleaned Chitterlings
2 Garlic cloves
3 Bay leaves
2 lg Onions
1 tb Salt (not iodized)
1 tb Pepper
1 ts Cayenne pepper
1 ts Chili pepper
1/2 ts Ground mace
1/2 ts Ground cloves
1/2 ts Ground allspice
1 tb Minced thyme
1 tb Minced marjoram
1 tb Minced parsley
Pork should be approx 2 lbs fat and 2 lbs lean
Chop, do not grind the meat. Mix with remaining seasonings. Stuff into casings. Age at least overnight. Fry in skillet on medium heat until well done. Drain on paper towel and let cool.
