Shauna’s Fried Chitlins w/ Plum Sauce

Shauna’s™ Fried Chitlins with Potomac Plum Sauce
Shauna’s™ Fried Chitlins Ingredients:
  10 lbs Shauna's Fully Cleaned Chitterlings
  Shauna’s Gourmet Chitlin Seasoning Blend
  Flour
  1/4 cup oil

Directions:
 Rinse 10 lbs Shauna's Fully Cleaned Chitterlings (weighed after cleaning)
 Place in pot, cover with water, add lid
 Bring to rapid boil, drain and thoroughly rinse in strainer
 Return to pot, cover with fresh water
 Add 6 ounces Shauna’s Gourmet Chitlin Seasoning Blend
 Stir and then replace lid
 Bring to second rapid boil (about 45 minutes)
 Remove from Heat and drain well
 Add 1/4 cup oil in chicken fryer
 Heat to 400 degrees.
 Dip chitterlings in flour and lay gently in oil with tongs -- Use splatter shield if necessary
 Fry to a golden brown on both sides
 Remove to platter lined with paper towels for draining
 Remove paper towels and serve with plum sauce recipe below... Enjoy!!!!!

Plum Sauce Ingredients:
  1 can crushed pineapple in syrup
  1 c. sugar
  1 c. water
  1 c. vinegar
  2 tbsp. Shauna’s Magic Marinade
  2 tbsp. cornstarch
  2 tbsp. cold water
  1 c. plum jam

Plum Sauce Ingredients

Directions:
 Heat pineapple with syrup, sugar, 1 cup water, vinegar and Magic Marinade to boiling.
 Mix cornstarch and 2 tablespoons cold water, stir into pineapple mixture.
 Heat to boiling, stirring constantly.
 Remove from heat, cool to room temperature, stir in plum jam.
 Cover and refrigerate.
Makes 6 cups. Serve with Chitlins.
